My kids LOVE M&M and so we always have them in the HOUSE. I had this huge container that I leave on our console table. I wanted to get rid of them…so I decided to us them this week in my BAKING. The kids LOVE them in the cookies. I also wanted to use something different than chocolate chips again LOL . This summer you will see me baking LOTS of cookies and CAKES. During the school year …I usually don’t bake much because I am always PREPPING for the kids WEEKLY school lunches and so I really don’t have much time to bake…but I think I will TRY to continue to bake a BATCH every weekend so that I can pack them a little treat every day during the school year. If your kids LOVE M&M candies as much as my kids…you should DEFINITELY make these COOKIES!! Your KIDS WILL LOVE IT!!!

 

INGREDIENTS

1 cup soft butter (leave out at room temperature)
1 cup light brown sugar
1 (3.4- ounce) package instant vanilla pudding
2 teaspoons vanilla extract
2 medium eggs
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
2 1/2 cups all purpose flour
1 1/2 cup Mini M&M

 

DIRECTIONS

Preheat oven to 350°F . Line a baking pan with parchment paper and set aside.

Using your stand mixer with the paddle attachment…. beating the butter and brown sugar on medium speed for 3-5 minutes until combined. Next, add in the vanilla pudding mix, and mix…remember to  scrape the sides of the bowl. 

Add in the vanilla extract, eggs, baking soda, baking powder and salt.  Mix  until evenly incorporated.

Turn mixer to low and add in the flour SLOWLY!!! MIX until everything is combine. 

FOLD in the mini M&M until evenly distributed.

Using a MEDIUM ICE CREAM SCOOP.  drop the dough onto the prepared baking sheet …about 2 inches apart.

Bake for 9-12 minutes, until lightly golden at the edges.

Allow the cookies to cool on the baking sheet and then transfer to a wire rack to cool completely.
