I love meatloaf!! I find that its such a comforting food for me. Meatloaf is one of those food that is the easiest to make.
INGREDIENTS:
3 lbs of GROUND chuck roast
1 tablespoon olive oil
1 large chopped yellow onion
4 cloves minced garlic
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
3 tablespoon Worcestershire sauce
2 tablespoon tomato paste
1 cup Italian Dry Bread Crumbs
2 eggs
1 cup ketchup
DIRECTIONS:
Preheat oven to 350 degree
Heat olive oil in a medium saute pan. Add the chopped onions and minced garlic, salt, garlic powder, and pepper . Cook over medium heat until the onions are translucent MAKE SURE to not BURN the onions and garlic. Add the Worcestershire sauce and tomato paste…stir to mix well. Next, turn off the heat and set aside so it can cool down.
In a large BOWL combine the ground meat, Italian bread crumb, egg, and the ONION mixture. Don’t OVER MIX…just LIGHTLY incorporate the ground meat mixture. Next, on a baking SHEET pan (I used parchment paper to cover the SHEET PAN) shape the ground meat mixture into a rectangular LOAF shape on the baking sheet pan. Once you go the meatloaf into the shape you wanted…SPREAD the ketchup EVENLY over the TOP of the meatloaf. Bake for 1:00-1:15 hour.
Serve with mash potato 😉




SIDE NOTE: I heard this a few years back and have been doing this ….I used a rectangular pan and fill it with a little water and stick it under the meatloaf pan. It helps the meatloaf from drying out and the top from cracking.
****I also used the Italian Bread Crumb because it has all the seasoning. If you use PLAIN bead crumbs then add some chopped parsley.
