When I am making my meal plan for the upcoming week…and I know I am super busy at work and after school activities on a particular day…I usually add a SUPER QUICK meal to my dinner. This is one of my most EASIEST AND QUICKEST MEAL EVER!! I USUALLY like to use GROUND PORK instead of ground beef…but I wanted to mix it up a little for the kids!!! I also bought ground beef for the week to make hamburger on Monday. When I meal plan…I usually only buy 3 PROTEIN items..and try to work around that. Sometimes…I only buy 2 protein and I will make 6 meals out of those 2 protein items.
Today, my son had a flag football game and my daughter was cheering for another game at school…and my oldest had to stay after until 5:30 pm…then she went to tutor…so I needed to make something that was super easy…without having to pull out my crockpot.
This ground beef rice bowl..is so flavorful and if you are on a budget..it really can STRETCH your DOLLAR!!! You can make it a little more salty…I didn’t make it as salty because my daughter doesn’t eat rice right now…she only eats it with cucumber.
INGREDIENT
2 pound ground beef
2 tablespoon brown sugar
6 tablespoons hoisin sauce
4 tablespoons soy sauce
1 teaspoon sriracha sauce (optional)
1 teaspoon grated fresh ginger or ground ginger
2 teaspoon garlic powder
2 teaspoon onion powder
6 cloves garlic minced
1 yellow or red bell pepper chopped
CARAMELIZE SAUCE
1 tablespoon oil
1 tablespoon sugar
GARNISH
sliced green onion
INSTRUCTION
To make the caramelize sauce:
1 tablespoon oil
1 tablespoon granulated sugar
Once you have the caramelize sauce made.
Add the beef to a skillet over medium-high heat and break it up with your spoon as you go along until it’s cooked ( 8-10 minutes). If there’s a lot of excess fat, drain it.
Stir in the sauce ingredients (sugar, hoisin sauce, soy sauce, sriracha, ginger, garlic powder, onion sauce, and garlic).
Reduce the heat to medium low. Add the red/yellow bell pepper pieces. Cook for a few more minutes, stirring often, until the peppers are tender-crisp.
Serve the beef over the rice and garnish with sliced green onions.

Oil and sugar

Once the sugar and oil makes that caramel color add the ground beef

Hoisin Sauce

Add dark soy sauce

Add in the brown sugar and stir well

You can use fresh or ground …I prefer fresh but I didn’t have any available

Yellow bell pepper..you can use any color you like

Garlic powder

Black pepper

Add in the dice yellow bell pepper and stir really well. Cook until they are nice and crispy

Serve with a big bowl of Jasmine rice
