Fish Sauce

6 tbsp. water
2 tbsp. sugar
1.5 to 2 tbsp. fresh lime or lemon juice or distilled white vinegar
2 tbsp. fish sauce
4 cloves garlic finely chopped
1 bird’s eye / Thai chilies finely chopped


Combine water, fish sauce and  sugar in a small sauce pan and cook over medium heat…stir until all the sugar is dissolved. Take off heat and let it cool before you add lime, lemon juice or vinegar in increments until you like how it taste..some people prefer it more sour than others. Top with finely chopped garlic and chilies. I like my fish sauce very spicy so I usually add more to  my individual bowl.
