To make the sauce
Melt the butter in a pan over low heat and stir in the flour and cook for about 1-2 minutes.
Take the pan off the heat and ADD the MILK. Stir it really well…continue stirring in the rest of the milk…add a little at a TIME!!!!
Once you have pour all the milk in…return the pan to the heat and START to bring it back to boil…STIRRING it continually …if you don’t continue to stir..the sauce will stick!! The sauce will thicken up and start to bubble up. Once it start to BUBBLE…TURN OFF THE HEAT!!! Stir in the mustard and cheese. Once the cheese is incorporated…pour it over the cooked macaroni. Stir it well so that the sauce coats all of the pasta. Once all the pasta is coated with the cheese sauce.
Spray an oven safe BAKING PAN with a cooking spray…I use Pam….then pour the cheesy macaroni in.
Sprinkle with more grated cheese over the top. Bake for 25 minutes at 350° F until the top is a golden brown. Take out the oven and serve!! ENJOY!!!
SIDE NOTE: Add the cheese to the sauce after you have turned off the heat and the sauce coat the back of your spoon when you lift it.
