I don’t know about you but I am so ready for the CHRISTMAS holiday/vacation to start NOW!!! I think its just the last home stretch that is so tiring. My oldest daughter is having her EXAM this week but her schedule is only 10:30-12:30 pm everyday this week and half of next week. The only problem is that its so hard to find someone to drop her off and pick her up.
So, this week I am trying to make food that its easy for her to eat in the am and after school that is easy to assemble and all she has to do is stick it in the microwave. I make a huge batch of these char siu pork that she can just add it to a bowl of rice or in a baguette.
INGREDIENTS:
4 lb of pork belly
1/2 pack of Chinese Barbecue Char Siu (seasoning mix)
1/4 cup soy sauce
1 teaspoon garlic powder
1/4 teaspoon black pepper
1 tablespoon honey
1/2 teaspoon sesame oil
GARNISH:
chopped green onion
DIRECTIONS:
In a medium size bowl…mix all your seasonings together…make sure to stir well so all the seasoning is nicely incorporated. Next, taking a LARGE ZIPLOC bag and add in the pork belly and then pour the marinate over. Zip the bag tightly. Refrigerate for at least 3 hours…over night would be better.
PREHEAT oven to 400 degree. In a oven proof baking pan (I used some Reynolds wrap to line my baking pan..this make cleaning up quick and easy). Now place the pork belly in a SINGLE LAYER and make SURE the skin side is up!!! Now bake for about 45-1hrs. Depending on your pork belly. I got my pork belly from Costco which they cut it into these 2 inch thick….so it only took me 45 minutes. After turn the oven to broil or 450 degree and bake for another few seconds…keep an EYE on your oven because it cooks really fast. You want a nice crust on the pork belly. Once you have a nice crust …take it out the oven and let it rest for about 15 minutes and SLICE this baby up…trust me….you won’t be able to resist sneaking a few pieces 😉
Garnish with some chopped green onions. You can eat it inside a baguette or on top of a bowl of jasmine rice.
