BREAKFAST CASSEROLE
With the school year finally in full gear and we are just getting the hang of things around here….and the weather is about to cool down a little. I can start making these BREAKFAST casserole dishes. I love preparing these casserole dishes at night and in the morning when my alarm clock goes off…I go downstairs…stick this baby in the oven and go back upstairs and get dress. By the time I am done dressing and go back downstairs…the casserole is DONE!!! Also, I can cook my bacon the same time as I bake these casserole dishes…and we will have a FULL BREAKFAST. These casserole is also GREAT for the weekend or at some BRUNCH get together. Takes no time to prepare and make and can serve LOTS of people. You can use it as a base and just make some sausages or bacon on the side.
Ingredients:
1 can of flaky biscuit (I used the Grand Honey Flaky)
1 cup diced ham
1 cup milk
3 eggs–beaten
1 teaspoon garlic powder
1/2 teaspoon Tony Chachere’s
1/4 teaspoon black pepper
1/2 cup Mexican cheese
GARNISH: sliced green onions
DIRECTIONS:
Preheat oven to 350
Mix all your ingredients in a big bowl..mix well
Pour into a grease casserole pan… I used a 9×9 square deep dish pan
Next take your biscuit and cut into 4 and lay on top of the egg mixture .. I rolled the biscuit around a little so all sides are wet.. Then I just layered it on top in a single layer.
Bake for 40-50 minutes or until top of biscuit is golden brown
I serve mines with more bacon (I diced it up and sprinkle on top)
Garnish with sliced green onions or tomato
