Banh Bo Nuong

INGREDIENTS:
1 can coconut milk (14 oz can)
2 cup sugar
3 T Pandan
2 cup flour (tapiacoa)
2 pink envelope Alda baking powder
1 spoon full rice flour
8 eggs room temperatures
***2 pack vanilla sugar (yellow package from Asian market) OPTIONAL
DIRECTIONS:
In a sauce pan add your coconut milk, sugar and pandan extract. Over medium heat cook until sugar is dissolve. Remember to stir.  Once the sugar is dissolve turn off heat and  set to COOL.
NEXT:
*Preheat oven at 350
**Spray GENEROUSLY the baking pan with Pam..set aside
In another large bowling bowl …SHIFT the tapiacoa, rice flour and baking powder.
Using another bowl crack your 8 eggs and beat well..once the eggs are nicely beaten pour into the large bowl with the dried ingredients and the pour in your coconut milk mixtures (once it has cool down).
Then by hand or with a hand held mixer …mix until nicely incorporated. Don’t over mix.
Bake 350 for 1 hr
**make sure to do a toothpick test because many ovens are different and can vary with baking time
** many different types of coconut milk
Trader Joe, Chaokoh brand from Asian market, Aroy-D from Asian market..use what you are used too.
Once the toothpick comes out clean…set aside until it cools down.
