Trader Joe’s Haul

 

Trader Joe’s HAUL: 

2 bag of roman lettuce, 1 bunch of cilantro, 2 bag of orange, 1 bag of BLOOD orange, 3 Asian pear, 1 bag of shredded carrots, 2 English cucumber, 2 pack of little cucumber, 2 pack of tomatoes, 2 pack broccolini, 1 pack of broccoli (for roasting in the oven),  1 bag spinach, 1/2 g of 2% organic milk, 1 carton of organic half n half  (for my coffee), 1 frozen bag of string green beans, 1 frozen bag broccoli floret (for steaming). I also GRABBED 2 gardenia plant 😉 I hope this will last US UNTIL next SATURDAY !!! 

MY GAME PLAN 

During my drive home from Texas…I made a rough DRAFT menu for the next 3 weeks to start. This morning right before I was heading out to Trader Joes…I checked my pantry and my freezer for what I already have. For the next few weeks …I will try my best to eat from my pantry and freezer. I have TONS of shrimp and other seafood that my family had given me. My pantry is ALWAYS well stocked…. so I am trying to get rid of as much as possible in there. What I am going to be doing for the next few days is trying to take inventory of what sauces and items that I ALREADY have in my pantry and will tweak my weekly menu from there. 

Today, I went to Trader Joes with a list and only $100.00 in cash!!! I think I did really well….I DID follow all my grocery item LIST besides one EXTRA item….the 2 gardenia plants 😉 I needed a plant to replace my poinsettia that were outside. As you can see from my grocery cart that I mainly have fruits and vegetables…DID I ALSO MENTION THAT we ARE TRYING TO EAT HEALTHIER???? YES!! We are trying to kick start 2020 with a healthier lifestyle. Not that we been eating a lot of bad food…but we have been eating a lot of CARBS and not AS MUCH vegetables. My weekly menu that I made for the past 3 weeks consist mainly of  proteins and vegetables.

Tonight MENU — BANH XEO (Vietnamese Crepe) with lots of vegetables!!! I also tried to reuse the vegetables that we had from lunch. 

 I used a new recipe tonight …I actually use a banh xeo mix from the Asian Market but I added 1 cup of rice flour, 1 can of coconut milk, 1 can beer, 4 cups of water, 1 tablespoon turmeric, 1/2 cup of chopped green onions. MIX really well. IN a hot skillet I pour in a little   olive oil and taking 1 small ladle…I ladle in the crepe batter. Turning the heat to medium low….making sure to POUR A VERY THIN LAYER. Taking the skillet and swirl the batter around to coat the WHOLE skillet. After about 2 minutes…add in the shrimps, pork, and onions. I didn’t use bean sprouts because the market didn’t have any. So, if you have bean sprouts …add it in at this time.  Let the crepe cook a for another 4-6 minutes. The crepe is READY when the side starts pulling away from the skillet (rim). DON’T FLIP the crepe!!! 

 

 

Serve with sliced cucumber, lettuce, cilantro, basil and mint. DON’T FORGET THE PREPARED FISH SAUCE.

FOR LUNCH WE HAD STEAM RICE NOODLES with LOTS of vegetables (I tried to repeat the same vegetables so we don’t waste…cucumber and roman lettuce). I had grabbed 2 packs of these steam rice noodle from Houston, Texas yesterday from Thien Thanh. The ones I got were filled with mince pork and mushroom.

 THIS WEEK MENU:

Monday –Beef stew with carrots and potato (I used a curry pack from the Asian market) 

Tuesday–beef enchiladas and garlic broccolini with a salad 

Wednesday–Salmon Bake (salmon, imitation crabmeat, roe, and seaweed chips) serve with some jasmine rice 

Thursday–bake chicken with sauté spinach 

Friday –Savory Pork chops with steam broccoli 

Pork chop marinade with soy sauce, minced garlic, brown sugar, green onions, and Thai chili
