Zucchini is so abundant at my local grocery store …so this week I bought like 12 zucchini and wanted to make something different other than saute them or stir fry them. Someone post on instagarm about stuffing mozzarella cheese and putting mini pepperoni on top of a sweet pepper …so I decided to try it on ZUCCHINI instead. I love the CRUNCH of the zucchini …so I thought this would be perfect for my lil family. OH MY!!!! My oldest daughter LOVES IT!!!  I did 4 large zucchini and sliced it into 4 section each and they FINISHED IT ALL!!! Its BEST SERVED HOT…because the CHEESE is ooey gooey and its so good!! If you are looking for a healthier version of PIZZA..YOU NEED TO TRY this!!! Especially IF YOU LOVE ZUCCHINI!!

 

INGREDIENTS

4 large zucchini

2 cup shredded mozzarella

1/2 cup pepperoni

1 tablespoon Italian seasoning

olive oil

DIRECTIONS 

Preheat OVEN to 350 degree F.  GREASE an oven baking pan with a little olive oil.

Wash and CUT each zucchini into 4 section LENGTHWISE. Lay them flat in a single roll into the prepared baking pan. Sprinkle the mozzarella cheese over each slice of zucchini…then season with some ITALIAN seasoning. Finally, lay the pepperoni pieces on top of the mozzarella cheese. Bake for 15-20 minutes @ 350 degrees until the cheese has melted. Serve HOT

Cut the zucchini into thick stripe

 

Sprinkle mozzarella cheese over each slice of zucchini…be very generous

 

Lay the pepperoni on top of the mozzarella cheese

 

Hot out the OVEN..serve HOT
