WACKY HALLOWEEN LEMON BUNDT CAKE
I LOVE anything LEMON and this bundt cake is absolutely DELICIOUS!! The lemon juice and the LEMON ZEST just takes it over the TOP. I wanted a lemon cake tonight and but I wanted to make it festive for HALLOWEEN so instead of making it the same….I kinda made the inside to look like a candy corn 🙂
This LEMON BUNDT cake…is perfect with the lemon cream cheese frosting…so I added food color to make it more HALLOWEENyyyyy (If that is even a word) LOL. If you see all of my other bundt cakes….you know how much I love frosting all my bundt cakes this way. I was having a little hard time getting that pretty PURPLE color..it was a very dull purple…not as VIBRANT as the ORANGE color. I don’t think it looks all that bad 😉
INGREDIENTS:
1 (15.25 oz) package lemon cake mix
1 cup sour cream
1 (3.4 oz) package instant lemon pudding mix
1 cup vegetable oil
4 medium size eggs
1/2 cup warm water
1 tablespoon lemon zest
1 teaspoon pure lemon extract
DIRECTION:
INGREDIENTS:
4 oz. of cream cheese, softened
1 tbsp. of lemon zest
1/4 cup of lemon juice
2 cups of powder sugar
Red food color
Blue food color
Yellow food color
DIRECTION:
Mix the all the ingredients together until smooth and creamy. In 2 small bowls…divide the frosting equally into the 2 bowls.
Let cake cool COMPLETELY before you start frosting.
Making the orange frosting…add 4 drops of red food color and 4 drops of yellow. Mix evenly then pour into a piping bag or ziploc bag. Snipe a tiny hole on the side of the bag and start from the inside then piping to the outside. Keep repeating until you got the whole bundt cake frosted. Next, making the purple frosting….add 4 drops of red food color and 4 drops of blue food color into the bowl and start mixing until you get a nice purple color. Pour the purple frosting into a piping bag and start to pipe from the inside of the bundt…try to not pipe over the orange frosting.

I am sorry …but this is not the prettiest picture…BUT the orange color is PERFECT !!
