The girls and I have a sweet tooth …usually after DINNER ..we like to have something sweet. I try to bake something every week…and usually try to bake something different. Last week I made one with pecans and they aren’t too crazy with cookies with nuts ..so today. I made one with just CHOCOLATE!! LOTS of chocolate. I let them picked out which chocolate they liked. So, they picked out these 3. If you like…you can just pick one and PUT more in or put in some nuts in place of the chocolates. I once put in dried cranberries and white chocolate chips…and it was DELICIOUS!! The possibilities are ENDLESS 😉

 

INGREDIENTS

1 cup soft butter (leave out at room temperature)
1 cup light brown sugar
1 (3.4- ounce) package instant vanilla pudding
2 teaspoons vanilla extract
2 medium eggs
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
2 1/2 cups all purpose flour
1 cup semi-sweet chocolate chips
1 cup dark chocolate chunks
1 cup white chocolate chip

 

DIRECTIONS

Preheat oven to 350°F . Line a baking pan with parchment paper and set aside.

Using your stand mixer with the paddle attachment…. mix the butter and brown sugar on medium speed for 3-5 minutes. Next, add in the vanilla pudding mix, and mix…remember to  scrape the sides of the bowl. 

Add in the vanilla extract, eggs, baking soda, baking powder and salt.  Mix  until evenly incorporated.

Turn mixer to low and add in the flour SLOWLY!!! MIX until everything is combine. 

FOLD  in the different CHOCOLATE chips until evenly distributed. You don’t want to over mix because the CHIPS would break. 

Using a MEDIUM ICE CREAM SCOOP.  drop the dough onto the prepared baking sheet …about 2 inches apart.

Bake for 10-12 minutes, until lightly golden at the edges.

Allow the cookies to cool on the baking sheet and then transfer to a wire rack to cool completely. Serve with a BIG GLASS of COLD MILK!!
