TACO POTATOESÂ
Every once in awhile I would have one of those lazy nights where …I would make lots of bake potato and just have a POTATO bar…where I have cheese, bacon bits, steam broccoli, butter, sour cream and etc. Tonight, we had “taco” Thursday…so I decided to do something different and have Taco Potatoes and my kids LOVED IT!!! Tonight …I did something different in the way I cooked my bake potato also…I used my instant pot and made these bake potatoes in less then 30 minutes!! You can get that recipe HERE.
INGREDIENTS:
1 lb ground beef (80/20)
1 tablespoon Taco Seasonings
1 teaspoon garlic powder
1/4 teaspoon salt
1 tablespoon oil (olive oil or coconut oil)
1 cup Pace Medium Salsa
GARNISH:
Mexican Blend Cheese
Sour Cream
Corn
Jalapeno
Guacamole
Chopped Tomatoes
Chopped Lettuce
Salsa
***Basically whatever you put on your taco..you put here.
DIRECTIONS:
In a saute pan…add a little olive oil or coconut oil and brown the ground meat. Once the meat has browned…if you have alot of fat/juice that has render…drain the juice. Next, add in the taco seasoning, garlic powder, salt, and pace picayune salsa and mix well to incorporate everything. Once everything is nicely incorporated…turn the heat down to low and cover and let it simmer on the stove for about 30 minutes. Season according to taste. Serve on top of the bake potato. Garnish as you like. ENJOY!!
