We have TACOS every SINGLE week. So, I always make EXTRA taco meat for the kids to snack on during the week. All they have to do is warm them up and put them in a taco shell, make a nacho or make a burrito. A few years ago….I would make these little cups with soft taco flour tortillas that they can just fill them with taco meat. Its great for their little hands. And its just a NEW idea for them…kids love cute little fun things.
INGREDIENT
Olive Oil spray
6 (8-inch) Soft Taco Flour Tortillas
Taco Meat
TOPPINGS
Pico De Gallo
Salsa
Thinly Shredded Lettuce
Diced Tomato
Red Onion (finely diced)
Mexican Blend cheese
Sour Cream
Guacamole
DIRECTION
Preheat oven to 375º F. Spray muffin pan with olive oil spray and set aside.
Cut tortillas into circles using at least a 3-inch round cutter. I used a little round ramekin. Place the circles into the muffin pan. Be sure to lightly press them into the bottom. Next, spray a little more olive oil on the top the tops and bake until lightly browned, about 8-10 minutes. Every oven is different so keep an eye on it…you don’t want it to burn.
Meanwhile, heat up the taco meat. Take the mini cups out of the oven and fill the cups with taco meat and then top with your FAVORITE toppings.
Serve the taco cups immediately.

I used these lil bowl as a mold to cut the circle

I used a kitchen scissor to cut them into these little circle

Spray the muffin pan with olive oil or any cooking spray of your choice

Make sure the circle is bigger than the muffin opening

Let them cool a little before you take them out the muffin pan

Filling each mini cups with some taco meat

Add whatever you like to your mini taco cups

I love these lil cups. They are perfect
