Shrimp Pad Thai
When making PAD THAI it is best to use a WOK because you need the pan to be hot and alot of SURFACE space to be able to move the cooked food around and up on the WOK. In this POST I will just have you make the scramble eggs before hand and just have it set aside..but if you have a WOK you can just move it to one side while you add all the other ingredients.


Shopping List:
1 lb of shrimp peeled and deveined
4 eggs scramble -set aside
1 pack thik pho noodle or pad Thai Noodle (soak or lightly blanch…set aside)
2 teaspoon minced garlic
1 Tablespoon sesame oil (optional–you can use vegetable oil or any oil you prefer)
The SAUCE:
1 cup Pad Thai sauce
4 Tablespoon sesame oil
1/8 c brown sugar
1/8 c fish sauce
1/8 c rice vinegar
1/8 c Sriracha
1/8 c soy sauce
(Mix all sauce in a bowl and set aside)
Vegetables:
1 cup bean sprout
1 cup shredded carrots
2 stalk green onion–cut into 2in pieces
Garnish:
Lime wedge
chopped cilantro
Chopped green onion
Crushed peanut
Sriracha
Direction:
When making PAD THAI you have to have everything ready and prep beforehand because you need to have everything ready to go and be able to grab it and start adding it to the WOK.
In a frying pan add a little cooking oil or butter…next pour in your egg mixture, scramble them for about 1-2 minutes. Pour into a bowl and set aside
in a WOK or LARGE frying pan over medium high heat add some sesame oil (I like to cook asian dishes with sesame oil because it gives it that asian flavor) next, add the shrimp and garlic and sauté. .. making sure to stir continually and keep and eye on the garlic because you don’t want it to burn. Cook until the SHRIMP is pinkish then set aside. If you are using a WOK…move it to the side of the WOK.
If you are using the frying pan… add some more sesame oil then add the noodles ..cook for about 1 minutes then add the PAD THAI sauce then add BACK IN the eggs and shrimp ..toss together..cook for another 5 minutes then then right before you turn off the stove…add the shredded carrots, bean sprouts, and the green onion pieces….turn off stove and PLATE. Garnish with chopped cilantro, green onion and crushed peanut.
Squeeze some lime and add some Sriracha if you like it spicy
