PANDAN STICKY RICE
Every time we go to Houston, TX we stop by this little bakery and pick up some sticky rice. They make different flavors but the pandan is ALWAYS my FAVORITE. But when I am craving it at home…I can whip up a batch in no time because I let my rice cooker do all the work. Pandan sticky rice or xoi la dua comes from a plant flavoring extract/paste or you can buy the pandan leaves in the freezer section of the Asian market and go home and blend it up yourself…but I usually use the pandan flavoring paste. It comes in a little tube in the baking aisle.
Glutinous rice is what you used to make sticky rice, you can’t not use regular rice which will not be sticky when cooked.
Today, we had no plans so I decided to whip up a batch for the kids to snack on and since I have a little get together tomorrow…it would be perfect to have something to munch on. It goes great with some cha lua or you can just eat it by itself.
- 2 cups glutinous rice–sticky rice
- 1 Tablespoon pandan extract/flavoring paste
- ½ can coconut cream
- 3 Tbsp sugar
- 1/2 tsp salt
****make sure it is coconut CREAM not the milk.
- 1 Tbsp crush peanuts
- 1/2 tsp sugar
- 1/4 tsp salt
- shredded coconut (I got mine at Trader Joes)
- 1 tablespoon of baked sesame seeds
Add the water mixture to the rice in a large bowl. I added enough (like how I cook my rice)1:2 ratio. Now set the menu to “sweet” setting.
****Soak for 4 hours unrefrigerated.
****If you are using the rice cooker…you don’t have to soak it.
Drain liquid from the rice. If you are using the rice cooker….DON’T drain the liquid …add the rice and liquid to the rice cooker.
I have a rice pot that has a sticky rice setting. So I use my rice pot..but if you want you can steam for 15-20 min, until rice is soft and slightly clear. Soft enough to squeeze with your fingers.
Mix coconut milk, sugar, salt. Add to rice in the steamer. If you are using the rice pot…midway during the cooking process..add the coconut milk, sugar, and salt and give it a few stir..then close the lid. Let the cooking continue.
Steam for another 10-15 more minutes.
Make the topping by crushing the peanuts, sugar, sesame seeds and salt.
Add shredded coconut and topping to the sticky rice.
