Today, was a LITTLE ROUGH getting up. We stayed up WAY TO LATE last night. After all the festivities…we ended up watching the movie DUMBO and eating up all our JULY 4th treats and LOTS of BUTTER POPCORN!! If you haven’t seen the movie DUMBO…you should watch it!! It is a great movie!! My youngest lil gal saw it 3 times and SHE LOVES IT!!! Since…I had such a SLOW start to this day…I ended up making this ONE PAN FAJITAS. I love making any dish that is ONE PAN!! The clean up is fast and easy!! WIN WIN for this momma!!
This one pan fajitas is so easy and you can basically add anything you like. I have made it with just green bell pepper…I also made it with some zucchini, squash, and asparagus. You can make it all vegetarian if you like. You can serve it up with some beans or corn on the cob…or even some spanish rice. YUM YUM!!
INGREDIENT
CHICKEN, SHRIMP, and VEGGIE MIXTURE
3 boneless, skinless chicken breasts sliced into strips
1 pound large size peeled and deveined shrimp
1 red bell pepper, cut into strips
1 orange bell pepper, cut into strips
1 yellow bell pepper, cut into strips
1 medium yellow or white onion, cut into slices
SEASONINGS
¼ cup olive oil
3 tablespoon of taco seasoning (store bought or homemade)
2 teaspoon garlic powder
2 teaspoon onion powder
Fajita size flour tortillas
TOPPINGS
Sour cream
Guacamole
shredded lettuce
diced tomato
salsa
cheese
INSTRUCTION
In a large Ziplock bag, combine chicken & shrimp with all the bell peppers and onion.
In a small bowl, whisk together olive oil, taco seasoning, garlic powder, and onion powder. Pour over the chicken, shrimp, bell pepper strips, and onion. Seal bag and shake until everything is well coated. Refrigerate for at least 30 minutes and/or up to a few hours.
Preheat oven to 400 degrees F. Line a large cookie sheet with foil and spray with cooking spray. Spread seasoned chicken, shrimp, and veggie mixture onto the prepared cookie sheet.
Bake for 18 to 22 minutes or until chicken is cooked through. Depending on the thickness of your chicken strips.
Serve on flour tortillas with desired toppings.

I baked my chicken and veggies for about 8 minutes before I added my shrimps because my shrimps that I got were small. If my shrimps were larger than I would bake it all the same time
