Gosh we have 1 last HURDLE before we start SUMMER!! I am so ready for the SUMMER. This year has been a tough one for us. WIth my oldest at a new school. 2 drop off and 2 pickup…after school activities…this momma is SO READY for NO SCHEDULE and NO ROUTINE for the next 3 months!! Our summers are very lazy…we would stay up late and sleep in…then we get up and THEN we decide what and where we want to do or GO. We fly by the seat of our pants. Even though we don’t always have a plan…we never stay in our PJs…we always get up and get dress….I tell my kids..just to get dress and be ready.

This weeks meal planning is super easy. SInce its the kids last week..and they only have ACTUAL class until TUESDAY…I am making sandwiches and salads for them to bring to school. My oldest have exams for the next 2 days…and she only go for 2 hours …Wednesday…2 of my kids have an END of year party…my oldest have AWARDS DAY. So, I really only have to pack lunch for 2 of my kids. Tonight, I made sandwiches and wrapped them up. All I have to do when I pack their food in their lunch kit in the morning is grab the sandwiches, drinks, yogurts, and chips. Shouldn’t take me more than 10 minutes!! WIN WIN 😉

I did meal prep for  this week.

Chicken Breast season with Chicago Steak seasoning that I got from Sam’s. I lay the chicken breast on a baking pan that I covered with foiled…I also lay a piece of parchment paper on top because I wanted to catch all the fat that was render from the chicken breast.

I baked the chicken breast at 425 degree for 20-25 minutes. These chicken breast was a little THICKER. I didn’t pounded them out.

When the chicken breast are done…I would cut them into little cube. Its now ready for me to eat during those quick meals….I would throw a few pieces into my salads….or kids Alfredo Pasta. I can also make a chicken caesar wrap, chicken quesadillas or chicken tacos.

I double my pasta batch this week. I precooked them…I added some butter and season salts to half the batch…now the kids can have them as a side or with the baked cubed chicken breast. The other half is for chicken lo-mein.

Chicken Lo-Mein

 

Chicken thigh all marinade for chicken lo-mein. 

Marinate for oyster sauce, garlic, soy sauce, sugar, sesame oil, pepper

 

After I marinate I place in a ziploc bag..so make cleaning easy.

 

Sliced up my FRENCH bread for my white chocolate bread pudding. Making some for the teacher luncheon and desserts for  OUR dinner tomorrow.

All I have to do is bake at 400 degree for about 20 minutes.

We are having LOTS of salads this week. So, all I have to do is cook up my PROTEIN.
