These little meatball sub are so YUMMY..and easy to make. My kids love it when I make this for them. During the summer months ….this recipe is on repeat in my house…because I usually DOUBLE up my meatball recipe..so I can make 2 meals out of this. One meal is the meatball sub for lunch then I would cook up some pasta and have it as spaghetti and meatball…for dinner. During the summer months when we spend majority of our days out and about or just hanging in the pool…I usually make meals that can be used for lunch and dinner. So, you will see many of my meals…center around 1 protein…but 2 different meals that SAME DAY. STAY TUNE!!!
INGREDIENTS:
1-32 oz bag of premade meatballs
1-32 ounces jar Tomato Basil Marinara Sauce
1/3 cup strawberry jam
1 teaspoon garlic powder
2 cups Mozzarella Cheese (or more depending on taste)
6 Sliced French Bread or Sub Rolls
Butter
1 teaspoon ITALIAN seasoning
DIRECTIONS:
In a large POT…add in the bag of premade meatballs, jar of marinara sauce, 1/3 cup strawberry jam, garlic powder . Let cook on low heat for about 30-45 minutes.
Cut bread in half, making sure not to cut all the way through. Spread butter over both sides of the bread. Put oven on the broil setting or 400 degree. JUST KEEP a CLOSE EYE on the SUB because you don’t want it to BURN!! Heat until the butter is completely melted and remove from the oven. Watch carefully as it can easily burn.
Place cooked meatballs and sauce onto the bread and generously cover with mozzarella cheese. Sprinkle with some ITALIAN seasoning. Return to the oven and cook until the cheese is melted, about 2 minutes. Serve immediately with extra sauce on the side for dipping.

This is the SUB I used

my meatballs are cooked and ready to be assemble

all assemble and ready for the oven

in the oven…cheese is melting

ready to be wrapped individually

I serve them on this tray with all the fixing

Easy lunch ideas for the kids…wrap them individually so they can just hold it and no dripping or mess.
SIDE NOTE: If you kids don’t like the sub crunchy..then don’t PRE-WARM the sub first…just spread the butter on top of each side of the sub…add the meatballs then the mozzarella cheese and Italian seasoning…then stick in the oven at 350 degree until the CHEESE is melted. My kids don’t like their sub toasted like me and the hub …so we usually make their first then just keep ours in the oven a little longer. I like MINES toasted…and crunchy 😉
