Last week was one of those week that I was so HAPPY that it is OVER…not that it was a BAD week..but it was a SUPER BUSY week at home and WORK. At work we had the BOOK FAIR all week so I knew that it was gonna be a SUPER BUSY week during the day time…since I am subbing in the library. It was busy BUT I have to say…I had a GREAT time working with these ladies at our school.
Then on Tuesday …I took my oldest and her 2 friends to see The Wizards of Oz……it was an AMAZING play…we laughed so much. The play was very much like the old movie BUT they updated …made it MORE MODERN!! We laughed so much….it is a great play….if you can go see it…I highly recommend it.
Since the week was pretty chilly and rainy…I made alot of soups and cooked using my OVEN. I baked this banana cake that is so GOOOOOD!!! I like my banana cake/bread warm so I can spread some butter on it…so usually I stick it in the microwave for about 15-30 seconds.
This banana cake is so easy to make…and you can add whatever EXTRA you like!!! I added coconut and CHOCOLATE chips…anything is GOOD with coconut and chocolate chips RIGHT????? I called this a banana CAKE because I made it in a bundt pan LOL. You can make it in a loaf pan…but you probably need 2 loaf pans.
INGREDIENTS:
2 cup of mashed ripe banana (about 6 small banana)
4 eggs
2/3 cup canola oil
2 cup all purpose flour
2 cup light BROWN SUGAR
1 small box vanilla instant pudding mix
1 teaspoon baking soda
1 teaspoon salt
1 cup shredded coconut (unsweetened)
1 cup dark chocolate chips (I used the mini chocolate chips)
DIRECTIONS:
Preheat oven to 325
In a LARGE mixing bowl…peel the bananas and mash them until there is not chunks. Next, add the 4 eggs and oil into the same bowl and COMBINE really well.
In another large BOWL combine the flour, brown sugar, pudding mix, baking soda and salt together. Once the dry ingredients are combined….add them to the WET ingredients and COMBINE REALLY WELL.
FOLD in the shredded coconut and the chocolate chips. Once everything is nicely incorporated pour into a GREASE BUNDT pan.
Bake at 325 dregree for 1 hour….or until the toothpick comes out clean.
Let cake cool and flip onto a serving platter or plate.

I love to eat my banana bread/cake with some butter 😉
