I remember always ordering this dish at one of the restaurant that I used to go to in NOLA …but I haven’t been back there lately because the restaurant had change management/owner and the food just doesn’t taste the same any more. I would get this dish with the sweet rice and it was so good!!! I had seen a post on FACEBOOK from one of my relative and decided to make it. I am so glad that I made it because my KIDS LOVED it. It is so good and FLAVORFUL!!! I had double the batch and made 12 pieces of leg quarters and we finished it in 2 days!! If you are looking of an easy and yummy chicken dish to make…you gotta try this recipe. PLUS….I know that leg quarters are on sale a lot.

I marinate the leg quarters in a huge ziplock bag

Pan fry them until both sides are golden brown

serve with some steam broccoli or sliced cucumber
Ga Roti
- 6 pieces Leg Quarter
- 2 teaspoon chicken power
- 1 teaspoon salt
- 1 teaspoon white sugar
- 1 teaspoon white pepper
- 1 teaspoon five spice
- 1 cup soy sauce
- 1 tablespoon mince garlic
- 1 tablespoon minced shallot
- 1 tablespoon honey
- 1 tabelspoon olive oil
- 1 cup coconut water

In a bowl add all the ingredients except for the leg quarter. Mix really well so the the sugar and spices are all dissolved. Next, add in the leg quarter. MAKE sure that every piece is coated really well. Cover the bowl with saran wrap or cap up the bowl with a lid (if it has a lid). Refrigerate OVER night.

In a nonstick deep frying pan. Add some olive oil and lay each leg quarter SKIN SIDE down. Fry each piece until its golden brown on both sides. Next, POUR in the marinate and turn the heat to medium low and add 1 CUP of coconut water. Put on the lid and cook for another 20-30 minutes. Keep and eye on it because some pieces arent as fatten so it doesnt render as much juice and so the juice can dry out and BURN the chicken. If you need to add more liquid…add more coconut water.

Serve the chicken with jasmine rice with some sliced up cucumber and tomato.
***SIDE NOTE
FOR the COCONUT WATER…I didn’t have the coco rico brand from the asian market so I used the coconut water from Costco.
