“DOCTORED UP” CAKE MIX ALMOND BUNDT CAKE

I used to make my almond cake from scratch and EVERYONE loves it but sometimes I don’t have All Purpose Flour on hand. I always have a box cake mix on hand because my kids LOVE using cake mix to make their sugar cookies. So, when I have a craving or press for time and can’t run to the grocery store…I CHEAT and I doctored up a box cake mix. I find that it tastes JUST as good. 

 

INGREDIENTS:

Almond  Cake
1 box yellow cake mix (I used Betty Crocker)
1 cup sour cream
1 cup sliver almond
4 Eggs
1/2 cup vegetable oil
1/2 cup water
3 tablespoon  Almond Extract
Almond glaze:
2 cup power sugar
3 tablespoon melted butter ( I melt in microwave)
2 teaspoon milk (I used what ever I had on hand)
2 teaspoon almond extract
DIRECTION: 
Grease a bundt pan and SET aside.

Preheat oven to 350.

Mix all the ingredients together EXCEPT the sliver almond. Once all the ingredients are incorporate,  FOLD in the sliver almonds. Pour the cake mix into the prepared bundt pan. Place the bundt pan in the middle rack in the oven.
Bake cake for 50 minutes or until toothpick comes out clean.
Once the cake is done. Let it cool on a cooling rack. While the cake is cooling…let’s make the almond glaze.

In a small MICROWAVABLE bowl..melt the butter. Then add the powder sugar, milk, and almond extract. I used a hand held mixer to mix the almond glaze. Mix it to the consistency that you are able to take a spoon and drizzle the glaze over the cake… I usually add 1 teaspoon of milk at a time until you get the consistency that is workable.

Once cake is cool…flip over onto a cake stand or a big dish.
Drizzle the almond drizzle  all over the almond cake then put more silvered almond over the top.. ..I usually put strawberries or blueberry in the center of the almond cake.
**** This cake is great for when you are invited to a dinner party and need something to bring…you can whip this cake up in no time.
