Today, we just chilled out by the pool and ATE our way through the day. I made the kids pizza (using Italian French Bread) then meatball subs. But right before bedtime..we wanted something sweet so …I baked some cookies. During the SUMMER…we are so not on any schedule for MEALS..for breakfast, lunch or dinner. We honestly EAT throughout the WHOLE day. I usually cook something in the am..and just leave it out and we just MUNCH on it throughout the entire day. When I see that we are low on food…I would wipe up something else. Everything I make during the summer…is usually very quick and fast. I usually make something that can be made into 2-3 separate items…for example; meatballs…can be made into meatball subs or spaghetti and meatball.
After the kids bath…and changed into their PJs, we usually just hang out and watch TV. So, I think cookies and milk are the perfect way to end the NIGHT!!! Hope you had a great MEMORIAL DAY with your family!!!
INGREDIENTS:
6 tablespoons butter softened
⅓ cup light brown sugar
⅓ cup white sugar
1 egg
2 teaspoons vanilla extract
1 cup, plus 2 tablespoons all-purpose flour
1½ tablespoons tapioca
½ teaspoon baking soda
1 cup semi-sweet chocolate chips
1/2 cup sweetened shredded coconut
1/2 cup chopped pecans
DIRECTIONS:
Preheat oven to 350°F.
In a large bowl, cream together the butter, brown sugar, and white sugar until light and fluffy. Add the egg and vanilla extract and beat until its creamy and smooth.
Next, slowly add in the all purpose flour, tapioca, and baking soda. MIX WELL…then add in the chocolate chips, shredded coconut, and pecans. DON’T OVER MIX!!
Using a medium size icecream scoop…scoop the dough onto a baking pan lined with parchment paper. Bake for 10-12 minutes. Once the cookie starts to have a nice golden color to the rim. Remove from the oven when puffy and barely cooked through, do not let them OVER brown.
Let cookies cool 1 minute on the tray and then transfer to a wire rack to cool completely. Serve with some a BIG glass of MILK!!!

SIDE NOTE: You can add anything you like to this recipe…I have added white chocolate morsel..just remember that if you add something…to decrease another…or you will not have enough BATTER for all the extra morsels/chips or nuts lol
Also, you can substitute tapioca for cornstarch.
