Lately, I am all about SIMPLE and easy meals….I guess its because I have been so busy with all the kids after school activities and trying to have dinner on the table by 6:00 pm. Many days I get home at 3:40 pm…then turn right around and head back to school for 4:30 pm…then back again to pickup another child at 6:30 pm. So, its great when I can throw something in the crockpot in the am and when I get home at 3ish…just make a quick side dish…and once I grabbed the last child at 6ish…we come home to DINNER. Some days…we all eat and my daughter just grab dinner after…because my 3 little ones are so use to eating dinner early. If you are looking for something easy and FAST…try this BBQ chicken recipe. You can have it in a tortilla wrap or on top of a bake potato…or do what I did…serve it with Sweet HAWAIIAN bun and some FRENCH FRIES …WIN WIN!!!
INGREDIENTS
6 BONELESS Chicken Breast
4 cup Sweet Baby Rays BBQ Sauce (your favorite brand)
1/2 C Brown Sugar
1 small onion diced
2 teaspoon onion powder
2 teaspoon garlic powder
1 teaspoon cracked black pepper
1/2 C Vinegars
GARNISH
sliced green onions
DIRECTION
Lay the chicken breast in a single layer in the crockpot. Next, add ALL The ingredients to crockpot on top of the chicken breast. Cover and set to 6 hours on low. Once the 6 hours is done…take 2 forks and shredded the chicken breast. Serve on some HAWAIIAN Sweet BUN 😉
