My favorite MEAL to make for the kids has to be TACO or anything MEXICAN. When I make taco …my KIDS have no complaint!! They sit down and EAT!! They would clean their plates and I RARELY have left overs.  Most of the time I would double my batch so I can make taco and enchiladas. Especially during the summer…I would cook for lunch so they can have it for lunch and dinner. My kids EAT through out the day during the summer so I try to make something that will last them all day and is easy to reheat.

Also, I am trying to stay away from carbs so…I want to make something that I can eat with a salad or some sort of veggies. While my kids eat taco and enchiladas…I ate my taco meat on a bed of lettuces.

 

I used lettuce as my shell

 

****Since I am trying to eliminate as much carbs in my meals as possible….I will be posting how I substitute my meals. Tonight was easy…I just used leafy green lettuce in place of hard shell taco. I am not gonna lie…its hard…but I am taking baby steps 😉

INGREDIENTS

1 lb ground beef (I get the 80/20)
1 (1 ounce) package taco seasoning
1 (16 ounce) jar of pace picayune sauce (medium)
10 stand & stuff taco shells
2 cups shredded mexican blend cheese 

TOPPINGS

shredded lettuce
pico de gallo
salsa
guacamole
diced tomato
sour cream
jalapeno

DIRECTIONS

Preheat oven to 400°F. Spray a 9×13-inch rimmed baking dish/pan with non-stick cooking spray and set aside.

In a large skillet over medium-high heat, add the ground beef and break up the meat with a spoon. Cook until meat is cooked all the way through, 4-5 minutes. Drain grease off meat, if necessary, and return to skillet. Add taco seasoning mix and pace picayune sauce (medium) and stir until ground beef is completely coated in seasoning. Remove from heat.

Spoon about ⅓ cup taco meat mixture into each taco shell (you want to get the stand and stuff taco shell so it won’t fall over in the baking pan)  and place in prepared baking dish. Sprinkle the inside of each taco with 2-3 tablespoons shredded cheese. Place tacos in the oven for about 15 minutes or until cheese is melted and just starting to brown in spots.

Serve tacos with lettuce, pico de gallo, salsa, guacamole, sour cream, jalapeno pepper or any of your favorite taco toppings.
